Olive oil is used in the Mediterranean diet as a dressing for salads and in the preparation of vinaigrettes. Don’t cook with it. In fact, when cooking with olive oil and taking it to a very high temperature, the configuration of the oil changes and strips off the benefits. As you adjust to a life without frying, you can cook with a variant of olive oil resistant to high temperatures or simply use coconut oil instead of vegetable oils.
