Parsley contains an enzyme known as carbonic anhydrase. This is a useful enzyme in many parts of the body and what it does is regulate pH levels. In other words, it helps your body counter acidity, which is a useful function for the stomach lining. In this regard, parsley will maintain your saliva at a neutral pH and make your pancreatic juice more alkaline. This helps regulate body pH and absorb nutrients faster.
