12) It is Associated with Anti-Cancer Properties
The field of cancer is difficult to research because there are many variants and confounders. However, parsley has been tested as a cancer-fighting herb due to the presence of apigenin and the multiple antioxidants and phytonutrients it has. Apigenin itself is also helpful to stimulate the production of antioxidant enzymes in the body. In some cases, patients may even experience a reduction of active cancer tumors; in others, cancer tumors are less likely to appear.
Apigenin in parsley may also trigger apoptosis, which is basically cell death in cancer. It causes cells to stop dividing suddenly by interfering in the cell cycle and may reduce the rate of invasion and migration of cancer cells.
Parsley has other compounds that may display additional anti-cancer activity, including eugenol, limonene, myristicin, and alpha-thujene. Vitamin C is also helpful in reducing the incidence of certain types of cancer as it is a potent antioxidant.
