If you’re not familiar with parsnip, just imagine a carrot, but instead of orange, the color is white or pale. This cream-colored root vegetable has a sweet flavor and contains an impressive share of potassium, vitamins, and antioxidants. Parsnip includes the two types of fiber described in this article, and it is native to Eurasia but available in most countries.
You will get around 5.6 grams of fiber per cup of cooked and sliced parsnip. This vegetable can be prepared the same way as carrots and added to salads, stews, and soups. It tastes fantastic roasted with potatoes, and you could also try dipping parsnip in hummus, just like you do with carrots.
