14. Carrot Muffins

If muffins do not sound like a healthy option for your kids, you can reconsider with this carrot muffin recipe. The ingredients you need include shredded carrots, banana, whole wheat flour, oats, Greek yogurt, and applesauce. Other ingredients include baking soda and cinnamon, vanilla extract, and three eggs.
First, you need to combine the dry ingredients on one side. Then, combine the wet ingredients on another side. Mix both types and divide into a muffin cup baking tray. Bake the carrot muffins for 18 minutes at 375 degrees and leave the muffins to cool at room temperature. You can store these muffins for days or months. Just make sure they are inside a freezer-safe bag and thaw when you’re prepared to eat.
