Assorted Snack Recipes
Are there any Mediterranean-style snacks you can eat without a sense of guilt? Of course, they are. These are perfect to eat between lunch and dinner. These recipes are easier to prepare than lunch recipes, and the portions are reduced. But they are all healthy and ready to eat in a few minutes.
1. Dried Fruit and Cereal Bar

This is a tasty afternoon snack you can prepare in advance, and it is in accordance with the Mediterranean diet. The ingredients you need include canola, rolled oats, pistachios, flaxseeds, dried apricots, sunflower seeds, raisins, peanut butter, shredded coconut, honey, vanilla, cinnamon, and brown sugar.
The preparation is nothing complicated. You will need the oven for this recipe, and while it heats, you can pour the dry ingredients into a bowl. Mix well, and then do the same with the honey, brown sugar, butter, and vanilla. Bring them together and boil for a few seconds. Pour the honey mixture over the dry ingredients and stir until even. Coat a baking pan with cooking spray, line it with parchment paper, and pour the mixture into the pan, pressing firmly to flatten. Bake for 25 minutes and let it cool. Then, slice into bars and refrigerate for at least 2 hours.
