Dinner, in general, should be lighter than lunch, but it is essential to replenish the energies spent during the day. Your digestion is often hampered by sleep, so softer foods like soups and salads are more recommended than pasta and other lunch foods.
1. Gazpacho

This famous soup is actually very easy to prepare and makes up a perfect dinner in the Mediterranean diet. To prepare it, you need four pieces of red pepper, two pieces of green pepper, one cucumber, four tomatoes, half an onion, 60ml of white vinegar, 30ml of lemon juice, and 90ml of olive oil, salt, and pepper.
To prepare gazpacho, cut off the stem of the red peppers, open them in halves and remove the seeds along with the white portion where the seeds are. Cut the peppers into smaller pieces and set them aside. Remove the skin from the cucumber. Cut in half and remove the seeds; cut each half into three pieces and set aside. Take the tomatoes, remove only the center of the tomato, cut them into smaller pieces, and set them aside. Remove the skin from the onion, cut it into pieces, and set it aside.
Put all the ingredients into the blender, and add lemon juice, vinegar, and olive oil. Make sure it is thoroughly blended. When all the ingredients are finely ground and mixed, strain and place in the fridge to cool. When serving, adjust the seasoning with salt and pepper.
